Most Mexican food is just simply not complete for me without the addition of creamy, delicious, guacamole. I love it in any way, shape or form. Avocados are pretty much the end all for me. I could eat them with anything and it would make even the most boring foods 100% more exciting.

Cinco de Mayo is a great excuse to make some delicious Mexican food, (like these Classic Enchiladas), and then cover the rest of your plate with piles of chips and guacamole. That is exactly what I am planning to do. And you?
I decided to be a little adventurous with my guacamole this time around. Of course, I had to prepare the classic version that all my kids love, but I decided to try another, more creative version as well.
Enter in Caramelized Onion and Bacon Guacamole.
This is the adult version of guacamole. Odds are, most kids won’t touch it when the word “onion” is in the title, so you are completely safe from having the kids devour it. It’s all yours.
This guacamole is slightly sweet and flavorful, with an almost barbecue taste to it. Absolutely delicious. Perfect with chips or veggies, or dolloped on your favorite tacos.
I have included this recipe for you, as well as the classic, so you have a little something to keep your kids busy while you stuff your face with Caramelized Onion and Bacon Guacamole.
The best thing about making guacamole fresh is that you can really tailor it to your tastes. Do you like lime? Squeeze a little extra in. Favor a spicier version? Dice up some jalapeños. Don’t like tomatoes? Leave them out. Mash it together and enjoy. Guac is an extremely forgiving dish. You can add and take away based on your taste preferences and more than likely, you will end up with a delicious version perfect for you. It is the perfect dish to throw together at the last minute for a get together. The bowl will almost always be scraped clean! My kids love helping me make this too, since it is a completely doable recipe for them to do all on their own once the ingredients are chopped. Just give them the ingredients, a bowl and a fork and have them mash away!

1 avocado, halved, pitted, and cut into chunks
1 tomato, chopped
2 tblsp sweet or red onion, finely minced
chips or veggies for serving
Place avocado in a small bowl. Mash. Add other ingredients and stir. Taste. Add more ingredients to taste. Enjoy!
Caramelized Onion and Bacon Guacamole
1 1/2 tbsp olive oil
1/2 cup sweet onion, chopped
4 garlic cloves, sliced
1 tbsp. brown sugar
1 tsp salt
3 slices bacon, cooked crisp and crumbled
salt to taste
In a small pan, heat olive oil. Add onion and garlic and cook for 15 minutes on medium heat until golden brown. Add brown sugar and salt and stir. Turn heat to low and cook for 15 minutes more. Add avocado to bowl and mash. Add onion and garlic mixture and bacon and stir. Salt to taste. Serve with chips or veggies…or eat with a spoon!
