As I write this, the winds are howling outside, and rain is beating down on my windows. By the time you read this, I hope the sun is shining and the warmth is back.

I am holding out hope that summer is on its way…

The kids are out of school, and our summer planning has begun! It includes all sorts of activities, outside, enjoying the weather! I can assure you, though, this was not the weather I had in mind! I was looking forward to many hot summer days doing fun things with the kids, but this is not exactly the start I was hoping for.

When that beautiful weather does finally show its face, we will be able to do all of our fun activities and enjoy the outdoors all day. We will undoubtedly be working up a thirst, and nothing sounds better than an icy cold lemonade.

Wait, I can tell you what would sound better.

A strawberry lemonade. 

This light and refreshing drink is so easy to whip up, fun to make for kids, or when you are entertaining adults (feel free to add a splash {or more!} of an adult beverage!), and is absolutely delicious. We are coming up on the perfect time to have the ingredients on hand too. Strawberry picking season! I love strawberry picking, and I always make sure I get a lot of strawberries for all the various things that I want to make! This is definitely one of those recipes. The best part is that it is the perfect recipe to make if you want to include your kids in the prep work. Simple cutting, lemon squeezing, and blending are perfect tasks for kids to help out. I even had a job for the little one: seed picking out of the lemons. He loved it! The flavor is a perfect mix of sweet and tart, and it puts a little creative spin on regular lemonade to kick it up a notch.

Strawberry Lemonade Recipe

  • 1-pint strawberries washed, hulled, and quartered
  • 1/2 cup cold water
  • 1/2 cup sugar
  • 5 lemons, seeds out, squeezed (should be about 3/4 cup lemon juice)
  • 2 cups cold water
  • crushed ice, lemon slices, strawberry slices, optional, for serving
  1. In a blender place strawberries and 1/2 cup cold water. Mix until pureed.
  2. Add 1/2 cup sugar and mix.
  3. Add lemon juice and water and blend for 1 minute until completely blended.
  4. Serve over crushed ice and garnish with sliced lemons and strawberries.
