My Holiday Baking Helper {Recipe + Giveaway}

I love holiday baking. It’s one of my favorite ways to gift hostesses, neighbors, teachers, anyone. However with so many helpers in the kitchen, things don’t always go smoothly:

 PAM Cooking Spray

The most common mishap is too much or not enough of some ingredient, too many cooks in the kitchen ruins concentration. The other is the ever dreaded stuck in the pan. We have two go to hostesses gifts that we like to bring, the Best Ever Bake Sale Banana Bread and a Sour Cream Coffee Cake {aka the Perfect Christmas Morning Coffee Cake}. They make great hostesses gift because they can choose to serve them as part of dessert or save them for breakfast the next day. We have gotten lots of thank yous for having a delicious breakfast all ready for our hostess after a big holiday meal.

Unstick your Pans with Pam

My favorite coffee cake pan is fluted and notorious for holding on tight to half the cake, even with cooking spray on it. We have given plenty of half cakes! Recently our banana bread has been creeping up the sides but sticking in the middle, leaving us with piles of crumbs instead of a beautiful loaf.  Not only does this ruin the gift-ability of what I’m baking but it makes for awfully difficult dishes.

I was starting to think I was doomed forever when I was given the opportunity to try the new formula of Pam Cooking Spray. Turns that my spray (which happened to be Pam) was old, probably several years! The new spray which has 99% less residue build up then other brands fixed all my mishaps! We’ve made two beautiful loaves of banana bread (threw in 1 cup of fresh cranberries for a holiday flavor!) and a tasty coffee cake. No that my problem has been identified the toddler and I are cooking up a holiday storm.

PAM Cooking Spray

Thankfully Pam has zero calories because this cake, well it has a lot. Adding too much sugar to the filling (see above about too many cooks in the kitchen) also makes for a lot of extra calories. On the plus side, it didn’t stick, even with all that extra sugar leaking out and making a melty mess. We had a perfectly lovely cake to give, or in this case to eat!

PAM Cooking Spray

This recipe is a tried and true recipe from an old Betty Crocker book we have from our parents. Note, despite my families love for the above pictured cake it does not normally have a whole or so much sugar! The toddler helped make a bit too much filling. When giving this as a gift or not eating until the next day save the icing. I usually add a recipe card with it if giving as a gift or make it fresh on Christmas morning. It’s best put on right before you eat it or else it’s just a bit sweet and soggy.

Sour Cream Coffee Cake
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1 1/2 cups sugar
3/4 cup butter softened
1 1/2 teaspoons vanilla
3 large eggs
1 1/2 cups sour cream

Brown Sugar Filling
1/2 cup packed brown sugar
1 1/2 teaspoon ground cinnamon

  1. Heat oven to 350.
  2. Make brown sugar filling by mixing together all the ingredients; set aside. Mix flour, baking powder, baking soda, and salt; set aside.
  3. Beat sugar, butter, vanilla, and eggs in large bowl with electric mixer on medium speed for 2 minutes, scraping the bowl occasionally.  Beat about one-fourth of the flour mixture and sour cream at a time alternately into sugar mixture on a low speed until well blended.
  4. Grease/spray your pan in your preferred method*
  5. for angel food or bundt cake pans, spread one-third of the batter (about 2 cups) in the pan, then sprinkle with one-third of the filling; repeat twice. You can also make this in loaf pans just use only about 1 1/2 cups before the filling and don’t repeat.
  6. bake cake for about 45-1 hour or until toothpick inserted in center comes out clean. Cool 10 minutes in pan on wire rack. Remove from pan to wire rack and cool completely.
  7. Serve warm or cool with Vanilla glaze.

Vanilla Glaze

1/2 cup powdered sugar
1/4 teaspoon vanilla
2 to 3 teaspoons milk

Mix all the ingredients until smooth and thin enough to drizzle.

Enjoy Christmas morning with hot coffee and the soft glow of lights. It”s worth getting up before the kids for! Also, be sure to check the age of your products before starting your holiday baking, it makes all the difference in the world!

Winner Selection:

  1. I usually give a little plant or something along those lines. The best hostess gift I’ve received was this Thanksgiving, my friend gave me apples dipped in carmel and sea salt. She put them in a little leaf shaped dish, wrapped them with clear wrap and tied them with ribbon and burlap. It was presented so well and tasted absolutely yummy!

  2. I love receiving homemade canned goods and love giving them away as well. Also, I once had a friend give me an unique colorful ornament…she said as soon as I saw it, I thought of you because you color my world. 😀 Thanks for the chance!

  3. This is great! Did you know that a local Gurnee chemical company makes the ingredient that makes Pam “new and improved”! My hubby works there otherwise I would have no idea. Random factoid.
    Anyway I like to make mini cranberry loafs for my clients and party hosts.

  4. Thanks for the recipe. Sounds delicious! Love Le Creuset! We give fudge and sometimes homemade truffles as gifts. Now my son can almost do it himself and wants to make it for his teachers.
